PRO TIP!!!!
✅if your tortillas break while rolling that means that your tortillas are not hot enough for this wrap a stack of at least 10 tortillas in paper towel or place in ziplock bag and microwave for 1 minute or use the comal and heat them up
✅if your taquito unwraps seal them with taquito glue( mix 1 tbsp all purpose flour and 1 tbsp water) I never do this because I never have an issue but you can do that or use toothpicks ☺️
✅enjoy while hot
✅if you want the salsa to be spicy add more Chile serranos this salsa is not spicy at all because we use Anaheim peppers that tone down the heat along with a lot of broth
✅keep in mind the salsa will thicken up and change color as it sits out tbh it tastes better the next day 😅

Ingredients:
2 lbs chicken breast
1/4 onion
Salt to taste
chicken bouillon(optional)
3 small russet potatoes
2 tbsp butter
Black pepper
2 tbsp APF
Cotija cheese (optional)
Oaxaca cheese or Monterey Jack
Corn tortillas
For my lazy rice:
Oil for frying
1 1/2 cup long grain rice
Piece of chopped onion
1/2 chopped tomato
8 oz tomato sauce
3 cups of broth
For the salsa:
2 jalapeños
2 Anaheim peppers
2 serranos(optional)
7 tomatillos
2 garlic cloves
Handful of cilantro
1/2 tsp oregano
1/4 tsp ground cumin
Salt to taste
1 serving of love 💕

These look delicious, can’t wait to try them. I made something similar but instead of chicken I used ground beef, potatoes and cheese and made fried 🌮 tacos.

Lazy, you say? Sign me up! One thing I've been doing lately is adding the diced tomato to my rice at the very end (but the sauce goes in at start like normal). Adds a lot more brightness of the acid in the tomatoes that way. Learned it from a Cajun friend who makes his dirty rice that way.
