I have a set of Shuns, great knives. I chose the 10 inch chef's knife but after using it for 2 years I found it to be a bit too long for my liking. So I looked for an alterative and I found the perfect knife for my style of cooking. It is an 8" Shibata Koutetsu Bunka. It is thin, razor blade sharp, and perfectly balanced for me. I have big hands and since I use the pinch grip my thumb and index finger extend a bit farther onto the blade I love the shape of the bunka and the fine tip. However, it is not a workhorse type of knife. It is for a fine, precise style of cutting which I enjoy. Also at $300 it isn't cheap but neither is the Miyabi Birchwood.

After some research, I bought a Miyabi bread knife for my wife. It's such an amazing looking and performing knife, that i just bought a Santoku chef's knife for myself. 😅
40% discount...couldn’t resist 😂

What the hell is this? A drop shipped video advertising drop shipped products. Every shot in this video is either promotional pictures or stock video, often times not even featuring the knives you're talking about.
Anyone who takes any advice on purchases from this video deserves everything they get.

Miyabi looks cool.
Will fit perfectly with my Wustoff German knife block set.

All great knives but, in a busy hotel kitchen they would be stolen on the first day.

I've owned Dalstrong. The fit and finish was terrible, with sharp edges of the tang protruding from undersized scales. Dalstrong's design can best be described as bloated--the blade is too thick, the knife is very blade-heavy, and the handle is needlessly fat. Some reviewers have found the opposite to be true and praised the fit and finish. That makes things even worse; it means Dalstrong can make a decent knife, but their quality control is non-existant--my sample should have never left the factory.

Another thing: what do Faberge eggs have to do with kitchen cutlery? Who gives a damn if eggs and knife handles are made from the same wood?

You don't slice sushi - which is rice - you slice fish for the sushi.
