I started some the other day and they are already incredibly tasty! I can’t wait to preserve more this way. I may have to purchase some more fermentation weights and lids because 4 just isn’t enough anymore haha. I didn’t have any labs, because my rice water got green mold on it instead of fermenting for me, so I used some whey from yogurt instead. Worked beautifully!

Hey Nate, just out of curiosity but if you had some peppers fermenting in a brine looking good, could you steal a little of that brine and use that to spike your tomatoes instead of LABS?

Thanks, giving it a try... How long should we wait until this is ready? I have 65F or 40-45F rooms, should i let it sit in the 65 for a few days before moving it to the 45? Whats your recommendation

You need an Air-Lock to let the gasses escape so the jar doesn't explode.

I started some of these on 9/11/23 and tried some today. Must say they do have bit of a alcohol taste to them
