Peaceful Challenge #1: Harder Than Hard?

We're trying to beat minecraft on peaceful mode. Sounds easy at first, but without hostile mob drops a lot of things are harder obtain or even impossible. We will need to come up with some unique ways to farm items in order to thrive in a peaceful world. We start our adventure in 1.16.2 pre 1. The game is not modded and we try to not use any external tools.

I learned that
- shulkers spawn in peaceful but don't attack you.
- we can probably make a more efficient iron farm by damaging villagers with projectiles

Just an fyi shulkers are spawned with structures so you can still get shulkers boxes in peaceful. They just don't attack.
