Making bread doesn’t have to be a whole thing… and this Irish Soda Bread proves it.
Just four ingredients, no yeast, no kneading—just mix, bake, and enjoy!
The secret? Baking soda + buttermilk do all the work while you take the credit. For this one, I added raisins, caraway seeds, and lemon zest for extra flavor.
It’s rustic, hearty, and ready in under an hour—because if the Irish could make this over an open fire, you’ve got no excuses!

INGREDIENTS
• 4 CUPS AP FLOUR, + MORE FOR DUSTING
• 1/4 CUP SUGAR
• 1 TSP BAKING SODA
• 1.5 TSP SALT
• 4 TBSP COLD UNSALTED BUTTER, GRATED
• 1 CUP DRIED CRANBERRIES, RAISINS OR DRIED CURRANTS CAN WORK TOO (OPTIONAL)
• 1 TBSP CARAWAY SEEDS (OPTIONAL)
• 1 LARGE EGG
• 1.75 C BUTTERMILK
• ZEST OF 1 LEMON, ORANGE WORKS TOO
(OPTIONAL)
PREP/COOK TIME: 1 HOUR SERVING SIZE: UP TO YOU
DIRECTIONS
1. PREHEAT YOUR OVEN TO 425°F. LINE A BAKING SHEET OR DUTCH OVER WITH PARCHMENT PAPER OR LIGHTLY
2. IN A LARGE BOWL, WHISK TOGETHER FLOUR, SUGAR,
3. GRATE BUTTER AND ADD TO THE FLOUR MIXTURE. USING A FORK, PASTRY CUTTER, OR YOUR FINGERTIPS, WORK THE BUTTER INTO THE FLOUR UNTIL THE MIXTURE RESEMBLES COARSE CRUMBS. THIS PROCESS HELPS CREATE A MORE TENDER BREAD.
4. IF USING, STIR IN THE CRANBERRIES, CARAWAY SEEDS, AND CITRUS ZEST INTO THE FLOUR MIXTURE TO EVENLY
5. MIX THE EGG AND BUTTERMILK TOGETHER IN A SEPARATE BOWL OR MIXING CUP.
6. MAKE A WELL IN THE CENTER OF THE FLOUR MIXTURE.
POUR THE BEATEN EGG AND BUTTERMILK INTO THE WELL.
USING A FORK TO GENTLY MIX UNTIL A DOUGH STARTS TO FORM. IT SHOULD BE STICKY BUT MANAGEABLE.
7. TURN THE DOUGH OUT ONTO A LIGHTLY FLOURED SURFACE. GENTLY SHAPE IT INTO A ROUND LOAF WITHOUT OVER-KNEADING. TRANSFER THE DOUGH TO THE PREPARED BAKING SHEET.
8. WITH A SHARP KNIFE, CUT A DEEP X INTO THE TOP OF THE LOAF. THIS HELPS WITH THE EXPANSION AND EVENS
9. PLACE IN THE PREHEATED OVEN AND BAKE FOR ABOUT
40-45 MINUTES, OR UNTIL THE LOAF IS GOLDEN BROWN AND SOUNDS HOLLOW WHEN TAPPED ON THE BOTTOM.
10. REMOVE THE BREAD FROM THE OVEN AND LET IT COOL ON A WIRE RACK FOR AT LEAST 20 MINUTES.
11. SLICE AND SERVE THE SODA BREAD WARM OR AT ROOM TEMPERATURE, IDEALLY WITH BUTTER AND JAM.
