How to Make Funfetti Cupcakes | Cupcake Jemma

You like Fun? You like Fetti? What IS Fetti? Well anyway, I know you like cupcakes so here is a little recipe for some colourful Funfetti Cupcakes which will definitely brighten your day!

NOTE - If you are wondering what's up with my nose, ask the low hanging tree branch next to Frensham Ponds in Surrey.

RECIPE

For the cupcakes -

125g unsalted butter, soft
125g caster sugar
125g self raising flour
¼ tsp bicarbonate of soda
2 large free-range eggs
1 ½ tbsp whole milk
20g multicoloured sprinkles/jimmies
¼ tsp vanilla extract

For the topping -

150g unsalted butter, soft
335g icing sugar, sifted
1 ½ to 2 ½ tbsp whole milk
¼ tsp vanilla extract
LOADS of extra sprinkles/millions

FOR EVERYONE IN AMERICA, HERE ARE THE INGREDIENTS:
1/2 cup softened unsalted butter
1/2 cup regular sugar
1 cup self raising flour ( or flour with a teaspoon of baking powder)
1/4 tsp baking soda
2 large eggs
1 1/2 tbsp whole milk
1/4 tsp vanilla extract
1 1/2 tbsp sprinkles
  FROSTING
1/2 cup +2 tbsp softened unsalted butter
1 1/2 cup sifted icing sugar
1 ½ to 2 ½ tbsp whole milk
¼ tsp vanilla extract
extra sprinkles
