This battle reminds me a lot of the Sif battle from the original Dark Souls. The strategy here is going to be pretty much the same idea from that battle.
You're going to want to stand under him or just on the outside of one of his hind legs throughout this entire battle. Most of his attacks are from the front and they do the most damage of all his attacks. If you follow this method and attack when you can, you shouldn't have too much trouble. Equip a 100% physical damage shield if necessary.
Killing him nets you 'Royal Rat Authority Soul', 'Rat Tail', and 14,000 souls
