The Flip is a category of cocktails that incorporate a whole egg as one of it's ingredients. The term 'Flip' was first used in the late 1600s to describe a mixture of beer, rum, and sugar, heated with a red-hot iron.

It has since evolved into a drink that includes a fortified wine or spirit shaken with a whole egg and sweetened with sugar - typically garnished with grated nutmeg.

EGG TIP: Test if an egg is fresh by placing it in water. A fresh egg will sink whilst a stale one will float.

INGREDIENTS
- 60ml Cognac (2 oz)
- 22.5ml Apricot Brandy Liqueur (0.75 oz)
- 15ml Simple Syrup (0.5 oz)
- 1 Whole Egg

METHOD
1. Combine all the ingredients into your cocktail shaker
2. Dry shake (without ice)
3. Wet shake (with ice)
4. Strain into a chilled stemmed cocktail glass
5. Garnish with grated nutmeg

That was seriously so freaking good. If anyone is unsure about the whole egg believe me it makes it SO MUCH better. It gives it such a smooth and creamy consistency. Highly recommend.

egg white gives the cocktail a really nice and fluffy texture
I tried out the difference with 1 or 2 whiskey sours
The egg white elevated the drink on to another level

Lovely drink. Didn't have apricot brandy so I took your advise on stone fruits and used my homemade Damson gin. Worked a charm. Lovely.

Nice, very nice Steve. Just a little bit of info from a big fan from France, we don't store our eggs in the fridge, as they are different to the ones in the states and presumably Australia. In America I know they wash eggs to strip the cuticle, or outer protective layer, which prevents contamination outside the shell.  So you need to refrigerate it to stop bacteria, where as in Europe we don't and the farms vaccinate chickens against salmonella instead.

I am curious, why do you use a spout and a jigger instead of just free pour counting when the spout is already on it? Is it just for show purposes?

Anders, thanks for another incredible drink, and speaking of things to do with that Giffard’s apricot liqueur, substitute it for the Creme de Mure in a Bramble cocktail, you won’t be disappointed.
