The bricks are infested which means you can break them fast, also the reason you are seeing particles is because the silver fish are supposed to be spawning but aren't because the world is in peaceful.

You used infested stone, not regular. Infested stone breaks immediately.

Theres a 4th step in making potions (but its optional). The ingredient is Fermented spider eye what it does is reverse the potion effect. Ex. Healing potion + Fermented spider eye = Harming Potion

The most likely reason you are able to take the blocks out in one pick is because you might have used infested stone bricks, when punched once a silverfish will spawn, they are most common in strongholds.
