BACON & FRENCH TOAST CUPCAKES - Nicko's Kitchen

Ingredients: makes 16

1 1/2 cups SR flour
1/2 cup sugar
1 tsp cinnamon
1 tsp nutmeg
1/4 cup melted butter
1/2 cup milk
3 eggs
MAPLE FROSTING
1 1/2 cups icing sugar
1 tbls maple syrup
1/4 cup soft butter
CANDIED BACON
3 slices bacon
1/4 cup maple syrup

yeah I cut it off too, but leave it on when i candy it as it holds its shape better. But cut it off when using the final product :D

Finally, someone else who understands how awesome bacon and maple syrup are together. Though I do it on sandwiches; however I use very lean bacon (eyes only) and dry fry it in my sandwich press, making sure to dab away any oil I can. Bacon and maple syrup sandwiches are glorious. Even works with salads on too.
