The tastiest omelette with cheese you will ever taste, it’s light, fluffy and delicious. Plus, it’s quite simple to make.

A lot of people step back when they hear the word souffle, believing it’s too difficult, time consuming and reserved for restaurants or master chefs. Well, you can relax with this recipe. This souffle is quick and simple to make, and will still yields that light and fluffy souffle texture you’re looking for. Best of all, you can make it in 20 minutes.

You can use any cheese you like, but a blue cheese such as Gorgonzola truly gives you the best tasting omelette. It brings it to a whole new level and well worth it.

If whisking by hand is not your thing, use a machine or any eggbeaters and make sure you whisk to soft peaks.
When making the roux for the mixture, ensure you cook off the flour nicely, at least one minute to avoid any floury taste.

Cheese, butter, eggs, what more is there to say! Enjoy my soufflé omelette with Gorgonzola cheese, or the cheese of your choice. (But use Gorgonzola!)

I cook the same style omelet without the roux and the yolks.
After I make a batch of hollandaise for breakfast in my small seaside cafe in south coast of Sydney, I use the leftover egg whites to make that. Instead of blue cheese, I put baked diced sweet potatoes, wilted spinach and freshly grated Parmesan.

There is a sharpness from the Gorgonzola cheese that makes everything better. I make a 5 cheese spinach dip and blue cheese is a necessity. I would make this with the addition of chives or green onions (and maybe some cayenne?). Thank you Chef for the inspiring recipe and technique for making an omelette that isn't burnt.
