1) Doctor Strange tried to use the mirror dimension during their fight on Titan, remember? But Thanos had the gauntlet and was able to overpower and break it before it reached him.
2) The Russos specifically adressed the "cut off arm" idea recently. They said that Thanos had extremely strong skin and that there was no garantee it would have worked. And that it was something Strange tried when he was viewing the 14 millions+ possible outcome, but without sucess.
In fact, any idea at all you come up with can be explained by the fact that Strange simply knew it wouldn't ensure their victory. He saw all the possible outcomes and there was 1 winning one, so he didn't bother with all the stuff he knew would not work ultimately.
