Recipe:
Shrimp:
1 lb medium shrimp peeled, and deveined
1 tsp salt
1 teaspoon Italian seasoning
1 teaspoon smoked paprika
2 Tbsp olive oil
Sausage and orzo:
1 Tbsp olive oil
6 oz smoked beef sausage, chopped
1/3 cup sun-dried tomatoes chopped
6 garlic cloves, finely minced
1 1/4 cup orzo uncooked
1/2 cup heavy cream
2 1/2 cups chicken stock
4 oz fresh spinach
1/2 tsp salt
1/4 tsp pepper
-In a bowl, season shrimp with salt, Italian seasoning, and paprika. In a sauté pan over medium heat, add 2 Tbsp olive oil and cook for 4-5 minutes. Remove and set aside.
-In the same pan, add another Tbsp of olive oil and add sausage. Cook for 5 minutes until lightly browned. Remove and set aside.
-Add shallots, garlic, and sun dried tomatoes. Sauté while scraping the bottom of the pan, for about 3 minutes.
-Deglaze the pan with about 1/4 cup of chicken stock. Mix in orzo for about 1 minute until toasted.
-Add remaining chicken stock, salt, and pepper and bring to a gentle boil. Reduce to a simmer. Cook, stirring occasionally for about 12 minutes.
-Mix in heavy cream. Add spinach and mix. Cover for about 3 minutes, until spinach is wilted.
-Remove cover and mix in sausage and shrimp. Enjoy!
