I personally think that the Luigi's Mansion 2 King Boo fight is the best out of all the final bosses in the series, mainly because of the two harrowing chase sequences in between the boss phases. I do appreciate the fact that Luigi's Mansion 3 took King Boo's moveset from the previous game and built on it.

I feel like LM2 did a better job for King Boo’s battle than LM3.
Though LM3 the screen quality of the game was better of course since it’s technology of today

Luigi's Mansion 3 final boss was DEFINITELY the best and the hardest. First, just before the final boss, you had Hellen Gravely, which was not easy ; we had to control both gooigi and luigi while paying attention to all the lasers. And then, King Boo. Compared to the others he was so hard ! I mean he had so many attacks we had to avoid and memorize, and all of them makes 20 damage, then he creates clones which means MORE attacks to avoid, AND we had to find the good one. Then there is a timer (very stressful) AND another clone, there are fireballs averywhere, tongues everywhere, bombs everywhere !!! Still, it was a really cool boss fight.
