Thank you! I needed that! I made something a couple of weeks ago that called for stiff peaks and - though it came out good - I was uncertain I'd gotten the right consistency. Looking at your video - more so than the finished product - confirmed that indeed I did :D

To me the stiff peaks you show looked a bit over done... Like nearly curdled. I guess to each their own. I didn't see stiff peak at all tho...

I was gonna comment so stiff peak is supposed to be grainy... luckily someone mentioned it is overwhipped in the comment 😭

There is also bec d'oiseau which is also whipped egg whites but it tends to be more like soft peak but more stable.
