chicken kolhapuri restaurant-style - In this recipe video, I am showing you how to make chicken Kolhapuri. It tastes the same as chicken Kolhapuri served in restaurants.
I have shown how to make Kolhapuri chicken curry with Kolhapuri chicken masala. The recipe of Kolhapuri chicken masala is also shown in the video.

This Kolhapuri chicken is a spicy chicken recipe from Kolhapur (Maharashtra). Serve this Kolhapuri chicken masala with Roti/Steamed rice.

Ingredients to make chicken Kolhapuri:
To make Kolhapuri chicken masala:
1 onion, sliced
1-inch ginger, roughly chopped
10 garlic cloves
1/4 tsp fenugreek seeds
1 tsp cumin
1 tsp fennel seeds
2 tbsp coriander seeds
1/4 cup desiccated dry coconut
1 tsp poppy seeds
1 tsp sesame seeds
8-10 byadagi red chili
1/4 tsp turmeric powder
whole spices:
2 green cardamom
1 black cardamom
2-inch cinnamon
1 blade mace
4-5 cloves
10 black peppercorns
small piece of nutmeg
To marinate the chicken:
500 g chicken
1 tbsp lemon juice
Salt to taste
To make the chicken Kolhapuri curry
1 Bay leaf
2 onions, chopped
3 tomatoes grind to a paste.
Coriander leaves

How to make spicy chicken kolhapuri
1) Heat oil in a pan & sauté the whole spices.
2) Saute the onions until translucent.
3) Saute until onions are golden.
4) Add ginger & garlic & fry until onions are golden. Keep it aside on a plate.
5) Roast fenugreek seeds, cumin, fennel seeds & coriander seeds until aromatic. Keep it aside on the same plate.
6) Dry roast desiccated coconut, sesame seeds & poppy seeds until golden. Keep it aside on the same plate.
7) Roast byadagi red chili until crisp. Keep it aside on a plate.
8) Let all the ingredients cool down completely. Transfer it to a mixer/grinder jar.
9) Add turmeric powder & little water & grind.
10) Kolhapuri masala is ready.

Marinate the chicken
Marinate the chicken with Kolhapuri masala, lemon juice & salt. Keep it aside.

Making the kolhapuri chicken
1) Heat 3 tbsp oil & sauté the bay leaf.
2) Saute the onions until golden.
3) Add marinated chicken.
4) Roast until oil starts to separate from the masala.
5) Add the tomato paste & salt.
6) Cook until oil starts to separate from the masala.
7) Add 1 cup water. Cover & cook until chicken is completely cooked.
8) Add some coriander leaves.
9) Heat oil & add 2 byadagi red chilies.
10) Add the tempering to the chicken curry.
11) Kolhapuri chicken curry is ready to serve.
