Can you do a video on how your long term plans will work? I’m most curious about what you will do for retirement when you don’t have a conventional job. I want to make this lifestyle work for me but I don’t know how financially.

Just found your site. Thank you so much. Composting, bone broth & most of all scraps, yes scraps. I've always had a hard time discarding scraps including the chicken fat off the broth. Just seemed like so much waste. Your videos gave me the confidence to give it a shot, using the chicken fat & the onion tops etc. I have been trying very hard to improve our diet which I know will improve our health. Your place looks amazing and I thank you for sharing your wisdom with the world. So much has been lost & just on the few videos I've watched so far it brings back memories of my grandparents & some of the things they did I had forgotten. Blessings to you all & those you Love🌷

I just freeze dried my first Georgia Candy Roaster squash and it was amazing! First, I will grow these again and again! They grow huge! I planted 3 seeds and got 15 squash almost all over 12 lbs each! They are like a sweeter butternut. But beware they cross pollinate! I got the biggest butternut I have ever seen, 15 lbs plus each! Anyway, I sliced it in half lengthwise, took seeds out, roasted the halves, scooped it into a bowl and blended it up, spread it out on four trays for the freeze dryer. After freeze drying we powdered most of it but just snacking on a piece was soooo sweet it was like candy! I rehydrated a small amount and it was so smooth and so sweet. This is my favorite freeze dried anything!

I recently saw a video about making 18th century pomade (basically hair grease, same general concept) where there was 2 different fats. In order to mix them well and keep it consistent, she just took a handheld mixer and mixed it as it cooled until it was just warm and pourable. The person that wanted to mix tallow and lard might consider doing that to keep a consistent product.

I sure enjoy these pantry chats. Carolyn, I don't have a freeze dryer, so canning is my only option. I have never peeled my tomatoes and wondered why someone would? I make lots of Italian sauce and tomato soup, cook all the ingredients down until they're soft and then blend them (in the pot) with an immersion blender. Then just bottle it up. No one can tell there are peelings in there and that's where most the nutrients in the tomato is!

Hello from fellow homesteaders across the WA boarder (49 degrees N.) We love your channel and have been watching for a few years. I did the whole bit, off grid, homeschool, and aimed (still aiming) for the most self sufficient life style. On tomatoes and our relative proximately; we have always done well with Amish Paste and usually put in two 50' rows with about a 500-700lb yield. As everyone and given the challenging Sahara summer we had, I diversified a bit and tried an old tried and true indeterminate Bonnie's Best. We yielded 450lbs from 16 plants!!! Indoor start, of course, July 1 set out. I did some research and found this was the common paste tomato, though round, to can for the victory gardens here and war time gardens abroad. Just wanted to l let you know we are for sure doing them again. Cheers and carry on with all your great information spread.

This is where I think record keeping is pivotal. Something I personally struggle with. And I why I think 4H is so important for kids. Learning record keeping early in life is beneficial whether you're on a homestead or in the city.

I've been told--rendering is something I haven't had opportunity to try yet--that tallow has a much higher smoke point than lard.
