Definitely do the underground bunker. That seems like a cool idea.

The underground bunker is the perfect idea honestly. I definitely feel like it should be a little bit bigger and 3 wide for the railing part, you'll thank yourself in the long run although i'm sure it will be way more work but 100% worth it when you get it all built. TNT mining could maybe help dig it out quick enough with maybe water along the walls to prevent too much of an explosion while doing it.
Also a form of a rapid fire TNT canon would be perfect and maybe a way to include fire charges as well. I think the Nether Portal is way better to get into the base and quicker but maybe some redstone secrets in the nether to get in and out and have a way to camouflage the portal inside of the sun as if the moon bros ever build over or something it would be best they don't know about it.

the bunker idea by itself is amazing, maybe a tiny bit bigger would be cooler (in my opinion only).
though maybe re-structuring the entire mountain into making the bunker actually blending inside of it would be a good idea ? would be even more work though, so its really up to you (also keep up the amazing episodes, hyped everytime a new one comes out)

For the new base, perhaps take inspiration from a missile silo or Vault 111 from Fo4?

The bunker would be better. Like you said, building underground makes creating auto farms easier. But I do think you should have the castle as a sort of decoy, that way if anyone somehow finds your new location, they’ll think that is your base instead of the bunker

bunker idea great idea possibly make it like 2-6 blocks bigger my opinion also on a hermitcraft episode there was a hermit who made a bubble elevator that could go up and down and used redstone to change to bubble column to take you to a specific floor

You can build this into a tower and have bridges going out of it connecting too towers or buildings on the outside. You could also build a wall all the way around the hill tops making this the center.

A way you can attack the moon is if and when the server gets updated to 1.20, you can use amethyst and sculk censors to transmit a signal upwards that can activate a cut rain dispense.

You should try to make the base more hidden

I actually feel like you can do both.
You can do the towers in a circular area around the bunker, that will be like your defenses and stuff.
The bunker can be your main base for all your farms and main storage, you could even filter some of the farms to your towers if you wanted to.
The towers could even be booby-trapped if someone decided to go in.
I personally think this is a good idea.

for the sorting system you should have an elevator in the middle and all of the items going down through a space next to the elivator just like the old base where the items were falling but this time they surround u as you are moving to different floors of the base

I like both ideas, but I feel like you can make the bunker look amazing, I think it's a cool idea. P.S. with the bunker you could potentially make an elevator system with water for your trident

Sigils, for the elevator you should look at the water elevator that impulseSV is using in hermitcraft.

I love the idea and shape, you should definitely integrate the river so it flows into the base! Also can we all appreciate that Sigils has gone from being red stone genius to great builder, learning to terraform and an author, keep up the great work man 🫡💪🏼
