So if that is a german potato salad, where does your "Mamman" comes from? De L'Alsace? That could fit. So funny that she uses Maggi, which has been on every table in Germany years ago. Actually we even have a plant, that is called "Maggi-Kraut" and that gives the special taste of Maggi: Lovage.
What I was surprised about was that the potatoes did not look like "salad potatoes". I germany we devide potatoe varieties into "salad potatoes" which are long, small shaped and stay firm after cooking. And the rest of potatoes which are more round and are powdery after cooking. But all other ingredients excluded the soja sauce where right. At least for southern germany.

How come I get the impression maman would have preferred to stay out of the limelight? :-)
By the way, if you can't find Maggi, try your local Asia store: "Healthy Boy Brand Seasoning Sauce" tastes almost exactly like Maggi, only slightly better. Plus it's less expensive.
