The word “yoğurt” comes from Turkish and is derived from the verb yoğurmak, which means “to knead” or “to thicken.” This name reflects the traditional process of making yogurt, where milk is fermented with lactic acid bacteria—typically Lactobacillus bulgaricus and Streptococcus thermophilus—causing the milk to thicken and develop a tangy flavor.

Historically, nomadic peoples on the Eurasian steppes discovered that fermenting milk made it last longer in the hot, harsh climate. Fermentation not only improved the milk’s shelf life by lowering its pH and inhibiting harmful bacteria but also made it easier to digest, which was especially useful for people who were lactose intolerant.

As the technique spread with the migrations of Turkic peoples, the word “yoğurt” entered various languages and eventually evolved into the English term “yogurt.”

Kiselo Mlijeko in Serbian is a different thing than yogurt. It is thicker compared to yogurt and it has a different taste to it. The microbial culture used to ferment the milk is also different. It is called Bacillus Bulgaricus and in western countries may be known as "Bulgarian yogurt".

İn Azerbaijan we call" yogurt" a little bit sour sweet pudding sold in the markets.This pudding contains fruit.But if you mean a thick tangy flavor that made by cow milk this is "qatıq".Fermented milk into yogurt.

Funny in Polish kisłe mleko sounds like zkisłe mleko which means spoiled milk. We also have zsiadłe mleko which we can loosely translated as sour milk. We also have jogurt, kefir and maślanka.

In East Azerbaijan state we say, “yoğurt”
We also have Kəfir, and Ayran/Eyran. So hurrah 🥳, I can travel 🧳 westward to Italy 🇮🇹 without any problems.😇

They’re all Turkish (yoğurt, kefir and ayran) and they all have it in their country because they were under Ottoman rule and got affected from Turkish culture. (Serbia, Greece, Armenia and Bulgaria) (Italy is not)
