Jamaican Stewed Peas

One of Jamaica’s favorite dish, Stewed Peas with pigtail. Simple and delicious

*Ingredients*

1 pound of Kidney Beans
2 pounds of Pigtail
1 pound Chicken Feet (optional)
1 cup coconut milk
3 stalks of Scallion & Thyme
3 pimento peppers ( for flavor) if available
3 cloves of garlic (chopped)
1 green hot pepper
1/2 tsp black pepper
1 tbsp all purpose seasoning
Few pimento seeds

**Instructions**
Wash beans with water and drain. Put beans in a large pot with about 10 cups water and put to boil, then add 4 cloves chopped garlic

Wash pigtail, put to boil in a large pot of water for 10 mins to remove excessive salt

Rinse pigtail then add to boiling kidney beans, stir and cover over low heat. Allow to cook for about 1 1/2 hours or until meat and beans are tender

Now add 1 cup coconut milk, scallion & thyme, whole pepper, salt and seasoning

Ingredients for spinners/dumplings
1 cup flour
1/4 tsp salt
1/3 cup water
In a small bowl, add flour and salt and whisk it. Add the water a little at a time and knead to form a smooth dough. Break dough apart into small pieces and roll between your palms to make spinners/dumplings, then add to stewed pigtail and beans.

Cover pot and allow to cook for another 5 minutes.
Meat and Beans should be nice and tender, stew should be thick.

Serve & Enjoy!

I agree, straight to the point. Making stew peas for the first time and I only wanted to know if I should pressure the pig tail. I didn't have to skip the video to do that, I watched the entire vid. Food looks amazing

One of my favourite dishes which i also cook @ home. It looks so good i wanted to reach thru the screen & help myself to a serving😀😀😀

Btw: you can remove some of the excessive salt from the pig tail by soaking it in some sugar & water overnight. Of course, based on the quantity of pigtail being prepared. I usually use about 2 or so tablespoon full of sugar with 10 or so medium pieces of pigtail. Still leave a bit of salt for the taste & flavor but not too much. Works for me everytime.
