Thievul's rivalry with Boltund isn't a reference to the fox and the hound, but fox hunting in general which was popularized in Britain. Hounds are often used to track a trapped fox, and the poor thing is chased to exhaustion and killed for sport. Makes sense why they're enemies even as Pokémon.

Annihilape's existence is a reference to one of Primeape's 'Dex entries, where in said 'Dex entry, it is said that Primeape sometimes gets so angry that it dies, though it looks peaceful in death. So Annihilape is a Primeape whose anger went even further beyond death.
