You know, the best explanation for the Oath's not coming online until 3rd Level that I've heard is that the paladin swears the Oath at Level 1, but it isn't until they have proven themself by keeping their word for two levels that the Oath Magic will reward them by flowing through them fully.

Couple things to add
1. Think not only of yourself but what best suits your party during choosing fighting style and Oath
2. There are lot more Oath's but again based of your tennants choose the one for you
3. Next to Paladin spells a Paladin can do a lot of Cleric spells.

I made a Paladin Oath of Vengeance feat Magic initiate so I could get some cantrips and an extra lvl1 spell at lvl1
Then get blessed warrior fighting style for two more cantrips from the cleric list.
