Materials:
🟣Noodles
🟣Red/purple cabbage
🟣Boiling water
🟣Lemon juice
Boil a few pieces of purple cabbage in a pot of water for 5-10mins. Take out the cabbage and add your noodle. Cook noodles according to package. Strain noodles and add lemon juice. You can experiment with different food to see the colours you can make!
✨The SCIENCE ✨
The purple cabbage in this activity is acting as a pH indicator. A pH indicator is a substance that change colour depending on the acidic conditions it is present in. Red cabbage contains a water-soluble pigment called anthocyanin, which changes color when it is mixed with an acid or a base. In this case, the colour of red cabbage juice changes to a bright pink/red❤️ in the presence of acids (like the lemon juice), and changes to a dark blue/green💙 in the presence of a base.
