Emma shares another of her delicious oat recipes - blueberry and lemon pancakes. Stacked on top of each other, layered with yoghurt, blueberries and honey, it's one tasty pre-ride breakfast!
Emma's third recipe in the Oat Cuisine Series is blueberry lemon pancakes. Another great recipe, packed full of carbohydrates to fuel you on your ride.

Ingredients (for 2 portions):
150g quick oats (about 1 cup)
300ml skimmed milk (about 1 ¼ cups)
2 eggs
1-2 tablespoons lemon juice
Finely grated zest of ⅓ lemon
1 teaspoon vanilla essence
1/2 teaspoon salt
3 teaspoons baking powder
A few squirts of 1-calorie cooking spray
Nutrition:
Energy (kcal) 621.1
Fat (g) 12.3
of which saturates (g) 2
Carbohydrate (g) 98.5
of which sugars (g) 52.7
Protein (g) 27.1
Salt (g) 1.6
Fibre (g) 7.4
