INGREDIENTS:
FOR FRIED CHICKEN
✔️500grams Boneless chicken
✔️2 cloves garlic (minced)
✔️1/2 teaspoon salt
✔️1/2 teaspoon pepper
✔️1/2 teaspoon paprika (optional)
✔️1/4 cup cornstarch
✔️2 tablespoon all-purpose flour
✔️1 large egg
✔️oil for frying
FOR THE SAUCE
✔️1 can (227g) Pineapple chunks
✔️1/3 cup ketchup
✔️3 tablespoon vinegar
✔️1 tablespoon soy sauce
✔️salt & pepper to taste
✔️3 red and green bellpeppers
✔️2 cloves garlic (minced)
✔️1 large onion (quartered)
✔️2 tablespoon sugar
DIRECTIONS
Cut the boneless chicken into bite-sized pieces. Transfer them to a bowl.
Add the garlic, salt, black pepper, paprika powder, cornstarch, all purpose flour and an egg. Mix gently until well-combined. Let it chill for 30 minutes.
Heat some oil in a pan. Deep fry the chicken pieces for 8 to 10 minutes using medium heat until golden brown.
To make them crispier, double fry the chicken pieces using high heat for 2 to 3 minutes.
For the sweet and sour sauce, In a large bowl, combine the pineapple syrup (drained from can), ketchup, vinegar, soy sauce, sugar, salt and pepper. Mix until well-combined. Set aside.
Heat some oil in a pan and add the garlic and onions. Saute until fragrant. Add the red and green bell peppers and saute for a few seconds.
Add the pineapple chunks and the sweet and sour mixture made earlier. Stir gently.
Add some slurry to thicken the sauce. Let it simmer for a minute.
Add the fried chicken pieces and toss gently until each piece is well-coated with the sauce.
Transfer the sweet and sour fried chicken to a serving plate. Serve with a lot of hot steaming rice. Enjoy!
