Lewis makes wild garlic salt in this week's Veg Hack. This recipe is a great way to capture the fresh garlicky flavour of this early spring delicacy, and once made, it can be stored for several months.

I did wild garlic pesto and used it on a leg of lamb. It was divine.

Brilliant idea, thank you. I love seeing a new way to utilise and preserve wild garlic. I have my own small wood which is bursting with it in early spring so all ideas very welcome.

Ramsons make a nice Green Sauce, and it goes great with Mackerel.

It'd be nice with a green chilli (or more, according to taste), if you like that kind of thing!

What a nice tip!! Thanks a lot 🙏🏼
I don't know if we have those wild garlics here in Spain but I know we have some wild garlic species. I'm gonna look for them and do this! I did a couple of weeks ago celery salt and it was such a discovering!

Brilliant!! I’ve never though of that. I suppose you can do that with onion tops too? Worth a go.

Hi - I made this a couple fo days ago with Riverford wild garlic - put the salt on x3 separate baking trays. Salt seems dry on on baking tray but 2 days on the remaining 2 still seem to contain moisture - should I dry in oven? I am 2 days down the line and concerned that there is still too much moisture in the remaining 2 trays. How 'dry' does this need to be/look? Thanks
