Generally there is no right or wrong here:
It all depends.
Want a commercial look with no distracting movement, that pulls the viewer out? Gimbal
Want an immersive feel that takes the viewer into the action. Handheld.

The handheld footage seen here is a bit to shakey for what handheld should look like. Buy a gimbal, maybe even from a affiliate link from this video, your gonna need it some day.
Learn to shoot handheld and the cradle technique. Your probably gonna need that as well.

ITK it depends on the type of video you want, and the mood you want to pass to the viewer. If you want a video with lots of action and fast moving subjects, no gimbal needed. If you want a calm and relaxing video like a documentary video or a landscape, asmr etc., then leave the camera glued to the gimbal! Otherwise a shaky movement in a calm subject and calm scene, demonstrates the strugle and stress inside the head of the subject.

Hate to be that guy but the shots you used as examples are shots meant for a gimbal and not for handheld so it’s obvious that the gimbal shot will look better. You would shoot that scene differently if you were handheld

gimbals are great for farther chasing shots, panning, side moving, cinematic camera panning and tilting, handhelds are also great, great for closeup shots, action shots, pov shots, closup chase shots, and can be also nice for far chase shots. it really is up to the aesthetics of your film or video
