Gluten free Vegan Peruvian dish! Stump Kitchen

Cheesy, gluten free vegan recipe? Yes please! This recipe is SO creamy and delicious, and super close to the original Peruvian recipe that Lauren makes with her mom!!!!!
Here's what you'll need:
4 medium Russett potatoes
8 ounces vegan Parmesan cheese (about 2 cups) we used earth Island brand
1/3 cup coconut cream from a can of coconut milk
1/2 cup vegetable oil
1 tablespoon seeded and finely chopped jarred aji amarillo peppers or fresh habanero
1 garlic clove, finely minced
Salt
4 large lettuce leaves (such as Bibb or romaine)
10 black olives pitted and sliced (Kalamata or Botija Peruvian olives)
2 tablespoons freshly chopped flat-leaf parsley
Boil the potatoes until tender. Blend up everything else - add crackers if you want it thicker, or water if you want it thinner. Put lettuce on the plate, place a few pieces of 1/2 inch thick potato rounds on it, and pour sauce on. Top with parsley and olives if you wish. Enjoy!
