The Norse and Germanic Tribes didn't wrote down any of their Myths and Spiritual Beliefs at all. They told the Stories to each other and through that, they've kept them alive in their Culture from Generation to Generation.
It were Christian Chronologists from Iceland (like Snorri Sturluson for Example), who started writing down the Myths and Spiritual Beliefs for the first Time and that was around the 13th Century, long after the Norse Folks got christianized from AD 700 to 1100.

Also, it is well known, that the Norse Folks actually have worn Helmets, but only for very specific Purpoises; just like any other European Culture did.

And who did ever made the statement that Norse Mythology came long after Greek and Roman Mythology??? There's no historical Proof for that!!! We only can track down the Existence of Norse Mythology to a specific Time Period but that doesn't mean, that it didn't exist way longer than we could ever imagine.
