Pizza shop I worked at did roasted pineapple and it was an absolute hit. They were big chunks but they got roasted for a while on a sheet tray so most of the moisture got boiled off. They turned into soft bombs of caramelized pineapple juice on a pizza and they were awesome

They also don't bother to strain the pineapple juice which curdles the cheese. Slice it thin, put it through the salad spinner. Then put it on the pizza.
