I roasted fresh goose for Christmas twice when I lived in Minnesota. I stuffed mine with onions, apples and prunes. So good!!!

Beautiful Roasted Goose. I thought about making a goose for Christmas. But, I don't think I could make it like the one I will always remember eating.  
I just have to let you know this brings back the fondest memories of my father and family days.
He loved to hunt and loved the outdoor sport. There is picture I framed of him holding a goose he shot. The wings are spread out wide and he stands holding it this way in full hunting hat and clothes and gun. We lived in Texas and he was in well, I'll say the gaming business in the swamps of Louisiana there was a casino in the early 40's. My mom, dad and brother were all invited to eat the goose the black chef made...I was maybe only about 3 or 4. I remember this was the Most delicious meal the chef had made wild rice . Oh, I remember the wild rice sooo delicious too.with Leaving at the feast. I still remember my dad holding me up to pull the handle of a slot machine. We had a wonderful life in Texas and later moved to Las Vegas in the early 50's...guess where my dad had the best job :)). I'm now a few mos. away from being 80.

We strangely don’t have Thanksgiving here but we do have turkey or goose for Christmas. Goose or duck fat is gold. It makes the perfect roast potatoes. Another lovely video! X

I was surprised to learn Germans use mugwort. We use it in Korean cooking also. I also didn't realize Goose was commonly eaten in German cuisine. Goose is very very expensive in Canada where I live. One thing Germans and Koreans have in common is a love of cabbage :).

The Mug wort mixed with fat is also a very good salve to put on Poison Ivy, especially if you are Back-Packing and left to your own resources. I always take a jar of ghee with me for a little addition to my campfire meals, so being able to make a salve with it is a double plus bonus. Mug wort grows near streams and is pretty easy to identify. I've never cooked with it before so this will be a great experience for me. Thanks, Jack

I'm surprised you didn't prick the goose's skin before roasting to release the fat. I have never cooked with mugwort. I've never seen it advertised either. I've only heard of it as part of witches' hexes in movies.

i am german and the meal is like at home, one tip, use mugwort and thyme, the a good spices for a goose. " frohe weihnachten"🎉

The whole meal looks so delicious! I'd love to try it sometime. Do you think it would be weird to add some apple cider or apple cider vinegar to the steaming liquid at the beginning for apple flavor?

Do you just leave it on the counter overnight or do you refrigerate it, before roasting?

Your goose looks amazing. I cooked one once and it was TERRIBLE. I might try your method one day, if my husband will allow. He was traumatized. I’m a good cook and this was a major fail. Excited to try something that is tried and true.
