I'm going to show you how to make Persian Love Cake into a cocktail and also show you how to make pistachio orgeat.
The Persian Love Cake is such a beautiful combination of aromatic flavors, it was just begging to be turned into a cocktail. Spoiler Alert- it tuned out amazing- likely due to this silky smooth Pistachio, Rose and cardamom orgeat. I used Dave Arnold’s any nut orgeat recipe with a few substitutions to create this orgeat.
Pistachio, Rose and Cardamom Orgeat:
50g pistachios- shelled with skins removed
195g hot water
2 cardamom pods
40 drops of rose water
.4g gum arabic
.09g xanthan gum
165g sugar
Soak the pistachios in cold water for 5 minutes.
Drain and soak for another 5 minutes in hot water.
Once skins easily slip off, drain pistachios and remove the skins one by one.
Add the pistachios to a blender with hot water with the seeds from 2 cardamom pods and blend on high for one minute.
Pour mixture into nut milk bad and squeeze out the liquid.
While the pistachio cardamom mil is still hot, add to a clean blender with rose water, and sugar and blend on medium. Add gums while blender is running and let it run for a minute and a half.
Pour orgeat into a jar and label it. This should keep for around 3 weeks in the refrigerator
Persian love cocktail:
1.5 oz Pistachio Rose and Cardamom orgeat
1.25 oz Dorothy Parker Gin - or any floral gin of your choosing
.5 oz Disaronno or almond liqueur of your choosing
.5 lemon juice
5 drops saline
Shake without ice to combine.
Dust your frozen serving glass with dehydrated pomegranate power using rose water to help power adhere.
Pour cocktail into dusted glass filled with crushed ice.
