We're excited to introduce our newest program: The Rethink Commissary Preservation Program.
The Rethink Food Commissary has operated throughout the pandemic, preparing an average of 9,000 meals a week using a mix of purchased, donated and excess food. Meals are packed in hotel pans and distributed directly to community-based organizations such as churches and community centers.
But sometimes, our commissary receives smaller, one off donations that are difficult to incorporate consistently into pan meals. Out of our desire to use 100% of our donations and minimize our waste, the Preservation Program was created.
The Preservation Team, headed by Mike Marcelli, will assess the donations that can't be incorporated into sheet meals and find sustainable solutions for them - creating delicious, shelf stable products like jams, pickles, stocks and preserves to supplement meals for our recipients. This program offers two solutions - erases our fresh food waste, while allowing our meal recipients to extend their Rethink Meals by stocking their pantry with nutrient dense, take-home provisions.
