The thing a lot of people don't realize is that outside of the main cast nearly everyone in that movie was dubbed over. The movie had a mostly British cast and the only British accents you'll actually hear are from Obi-Wan, C-3PO, and Tarkin. General Willard was dubbed by iconic voice actor Michael Bell, and it's why some of the bit characters like the cantina bartender, General Dodonna, and the officer who tells Vader "Holding her is dangerous" sound kind of odd and out of place.

So when making the original Star Wars, Jones wasn't the iconic voice over guy, he was just one of many American voice actors dubbing over all the British people.

George Lucas has said it over and over again that he was able to do Star Wars based on the success of American Graffiti but they didn't give him a whole lot of money to make the movie.
And the original trilogy had technology constraints.

should be noted that james himself did not think his contribution was even worth getting his name in the credits. james saw his contribution as more of a special effect than anything else which is why he did not get accredited or paid very much. when both George and James saw how much his voice was appreciated this issue was rectified in future movies. so don't go thinking this was a case of his bosses abusing him or anything like that.

Harrison Ford only got paid $10, 000 for playing Han Solo. Considering James’s only needed to do a voice that was not a bad deal. No one complained because it gave them exposure and catapulted their careers and set them up for life
