Evil Cooks' Octopus Al Pastor Became a Viral Sensation | Rebel Kitchens | PBS SoCal

The Poseidon is Evil Cooks' (Los Angeles) take on pulpo al pastor. Chef Alex Garcia borrowed the idea to use octopus on a trompo from a chef friend in Dallas, Texas but he made it his own by incorporating the spice blend, recado negro. Served on corn tortilla with pickled onions, avocado salsa and pineapple. The dish was a viral sensation on instagram and took Chef Garcia and his Los Angeles based taco stand to the next level.
