Chipotle Adobo Sauce | The perfect sauce for a little ting on the palette.

Here’s the recipe

1 - Whole Egg or Pasteurised Egg 
3 tsp (15ml) - White Vinegar
1 tsp (10g) - Dijon Mustard 
150ml (5 fl oz) - Vegetable Oil 
2 tsp (20g) - Tomato Ketchup
2 tsp (20g) - Chipotle in Adobo 
2 tsp (20g) - American Mustard 
1 - Pickle Slice, Diced
Seasoning To Taste

Method -

In a tall jar or container, add egg, white vinegar, dijon mustard and vegetable oil. Blend with an immersion blender to emulsify and create the base mayonnaise. Add the remaining ingredients and blend again. Place in the fridge until ready to serve.

When making the mayo make sure your container is tall rather than wide, you need to make sure the oil sits atop the egg and don’t lift for a few seconds until you see the immersion start forming then you may lift/lightly bob your blender up and down.

I’ve messed up mayo too many times in my life hahah
