There's a mistake you've made in your experiment: aggression doesn't trigger if the victim is killed in one hit. The mob being hit must be able to acknowledge that they have been hit. For example, if you one-shot a wolf, nearby wolves won't notice.

its actually possible for golems to kill vilagers, mainly if u win a raid villagers shoot frie works, instances sometimes happens when the fire work hits the golem
