Ethiopian coffee is known to be much less intense than american coffee too, having rich alkaloids that smooth out the intensity and jitters of caffein. A bit more like green tea in that sense

This is great and genuine!! I visited Ethiopia 10 years ago and experienced this in person several times. Missed my time there.

Pour-over using a single origin light roast is superior no? the beans are over-roasted, leaving nothing but bitter burnt flavor, and boiling the beans in the water destroys the delicate flavors of the coffee you would get in a proper pour-over.
