RECIPE: Cinnamon French Toast Muffins
Ingredients:
- 1 Loaf of french bread cut or torn into 1/2 inch cubes
- 2.5 Cups of milk
- 6 Large eggs
- 1 Tablespoon of vanilla extract
- 1.5 Teaspoons of ground cinnamon
- Butter and maple syrup for serving, optional
Instructions:
1. In a mixing bowl, whisk together the milk, vanilla extract, cinnamon and eggs to create the custard base.
2. Cut the french bread into 1/2 inch cubes and add to the mixing bowl with the custard base. Stir to make sure the bread soaks up the custard base.
3. Grease a 12 cup muffin tin. Add about 1 cup of bread cubes to each muffin cup.
4. When ready to bake, preheat the oven to 350 degrees F.
5. Bake for 25-30 minutes or until tops are golden brown. Let the muffins cool for 5 minutes. Remove from pan and serve with butter and maple syrup if desired.
TIPS:
- Get thick bread so that it hangs on to all that delicious custard base.
- When making french toast, you want the bread to be just a little bit stale. So leave it out overnight so it's just a little bit dry. What this ensures is that it soaks up as much of that custard base as possible.
