This good ol boy knows how to make pasta. Notice how he doesn't fiddle with a collander or rinse the pasta. Just grabs it with tongs and transfers it to the sauce, like a real Italian.

Sweet tomatoes make good sauce, the difference is in the "depth" of flavor. It really comes down to preference. The reason the rule is san marzano for a tomato sauce is because of quality control. You can expect the same result every time.

Not bad at all..but I'd at least use San Marzano or maybe Roma style of tomatoes and probably a can of tomato paste and a dash or two of Worcestershire sauce. I also use carrots to take away some of the acidity of the Roma instead of those types of tomatoes. Romas have a much deeper flavor and taste better too. Then get an immersion blender to use..
