Apple Explosion Cake-in-a-Mug (2 1/2 minute cook time)

A few simple ingredients, a large mug, and 5 minutes total are all you will need to make this "apple explosion" cake-in-a-mug! It's so quick and easy and you have an instant, delicious, hot dessert for one :) This is Laura's very own recipe she developed years ago, and it is also one of her favorites - enjoy :)
Porcelain Large Oatmeal Mug
“Apple-Explosion” Cake -in-a-mug for 1 😊
Ingredients:
• ¼ cup firmly packed brown sugar + 1 TSP
• ¼ cup all purpose, white flour
• ½ TSP baking powder
• 1/8 cup milk
• ½ tablespoon vegetable oil
• ¼ TSP vanilla
• 1 medium size apple
• 1/8 cup apple juice (or alternate, use Kahlua Liquor)
Method
• In an extra-large cup (or a bowl) (cup should be about the size of 3 – 4 cups) add the ¼ cup sugar, ¼ cup flour, ½ tsp baking powder, 1/8 cup of milk, the vegetable oil and vanilla and mix well till all incorporated and you have a smooth batter.
• Remove skin from apple, and de-core it, then slice and dice into ½ inch pieces
• Add apple pieces to the batter, and no need to mix – just leave the pieces on top of the batter.
• Then add the apple juice and sprinkle the 1 tsp of brown sugar on top
• Place in microwave and cook on high for 2 ½ minutes
