pumpkin muffins/cupcakes
1 box of spice cake mix
1 (15 oz) can of pumpkin purée (not pumpkin pie filling)
optional: chocolate chips and/or cream cheese frosting

directions:
preheat oven to 350 F. fill a cupcake tray with liners & set aside. mix spice cake mix & pumpkin purée until batter forms (will be thick). add chocolate chips if using. spoon batter into each cupcake liner about 3/4th of the way. bake for ~18 min or until toothpick comes out clean. let cool and frost with cream cheese frosting!
