Want to cook up something delicious? Give this gluten free tomato pasta a go. It's bound to impress! 🍅
Ingredients (serves 4):
320 g Barilla Fusilli gluten free
500 g fresh cherry tomatoes
150 g homemade cashew mozzarella
50 g tomato pulp
10 gr nutritional yeast
5-6 fresh basil leaves
1 clove of garlic
Salt to taste
Method:
Prepare the cashew mozzarella
Put the clove of garlic in a pan on low heat. Add some extra virgin olive oil until it turns a golden brown.
Add the tomato pulp after roughly one minute, meanwhile slice the cherry tomatoes into two and add to the pan.
Add a sprinkle of salt and let cook for about 10 minutes.
In the meantime, cook pasta according to the pack details in salted boiling water until it's al dente. Drain once ready.
Give the pan with tomato sauce a good stir. Add the cashew mozzarella and basil.
Mix well and serve immediately.
