Another Cara Brotman Raw Vegan recipe classic ...raw vegan falafel patties that taste like the real thing but not fried and it's even high protein low carb paleo keto friendly for those who want that. Either way, these are great healthy snacks made quickly and easily with only a few basic ingredients.
Raw Vegan can be delicious, fun and nutritious!

Cara’s Falafel Recipe
3 1/2 Cups UN-soaked walnuts
3 1/2 Cups cauliflower florets
1 Cup red pepper, diced small
3/4-1 Cup red onion, diced small
1/2 Cup parsley, chopped small
3-4 Tablespoons dried cumin powder (taste the mix and add more if needed)
2 Tablespoons soy sauce (taste the mix, add more if desired)
Pinch of sea salt

Process walnuts in a blender, a cup and a half at a time until it turns powdery. Repeat exact steps, 1 1/2 cups at a time with the rest of walnuts and then the cauliflower. Add to large bowl. Add remaining ingredients to processed walnuts and cauliflower bowl and mix well until everything is incorporated. With hands, form small, medium or larger patties, depending on taste. Lay out on a dehydrator sheet and place in a dehydrator, on 130-140 degrees for a few hours. Flip onto screen so they dehydrate evenly, for a couple more hours or until desired consistency.
You can also add minced garlic, minced serano pepper, diced mushrooms that have been marinated, etc... But I like to keep it simple.

UPDATE: I made the recipe and here is my review.
First, It's my first time trying one of her recipes.
Second: I eat meat with lots of salads. No carbs, no sugars, no bs.
Tird: I made the falafel, and I did everything correctly. The final result was absolutely ANAZING. it tasted so good, that I had to eat a second one, a big one. I was going to make a third one but I decided to leave it for the husband who is a meat eater too. But we've been watching Cara's videos, and we both agreed that someday we were going to give it a try. Well, I gave it to him, and I let him know it was going to be a little messy. If you want to eat a steak after this honey, let me know. I said.
He ate it, and I asked " honey, do you want your steak now?"
" No, I'm ok. Actually, can you give me one more of those burritos? 😂😂😂😂 I couldn't believe it.
For the first time since forever my stomach was feeling good, my palate satisfied and the hubby too.

I made this yesterday so it was ready to eat today. We had ours with some fresh lettuce, tabbouli and hummus (all raw vegan). We didn't have Cauliflower so had to sub zucchini. It was so delicious, best falafels.

Omg! I made this today and wow! So much better than I expected. I used more Cauliflower than Walnuts because I only had a little left and needed to share with my husband but it still came out perfect! Cara, you are a food genius. Thank you, queen. 🙏🥰

Finally got a new dehydrator for Christmas (thanks, hubby!) and made these today. My mixture did not stick together very well, and now after rewatching this, i see I didn't process the walnuts long enough. However, this recipe is so good, that it almost didn't make it into the dehydrator! I am going to try it again next weekend, this time I'll let the walnuts go a bit longer.
Also, I discovered silicone dehydrator sheets on Amazon that are perfect for making crackers or anything with a liquid base. I made raw wraps over the weekend and these worked perfectly. No spilling over the side!

Okay, so I am ~4 weeks now raw vegan. I found this great recipe about 2 weeks ago. I have made it 3 times already since then. They are so good! Also very adaptable because I often don't have all the ingredients, but the substitutions work great. Have to comment on how grateful I am for this almost daily staple 🌱🙏thank you Cara and Markus 🧚‍♀️
