S1 E3 : Bacalao Three Way

In this episode of Daisy, I create three different recipes using one of my favorite Lenten ingredients - bacalao. Bacalao, or salted cod, is capable of being stored unrefrigerated for several years and, for that fact, has been a staple of the human diet for centuries and accompanied many an explorer on long voyages between the old and new worlds. The process of salting and drying the fish actually enhances the sweet, tender flavor of the cod.
As a kid, my mother would send me to school during Lent with bacalao sandwiches. My classmates would turn their noses up at it, but they had no idea what they were missing! Watch as I demonstrate how to prepare Serenata De Bacalao, a salad of bacalao, onion, cilantro and hard boiled egg; Bacalao Guisado, a savory mixture of olives, spices and bacalao between slices of grilled eggplant; and Brandada De Bacalao, a delicious bacalao and potato dish that can be served over toast points or tostones. My mouth is watering just writing about it!
