I learned from social media that green beef is fresh because of a physical phenomenon called the ‘grating effect, ’ which means that the minerals in the meat can reflect light in such a way that the beef appears green.😊

The green meat is just a sheen from the thin membrane that's attached to the meat. It reflects the light in a way to show some different color you wouldn't expect. British bacon doesn't have this membrane attached, but when cooked and left in the fridge for 2 or more days, the color oxidizes changing some of it to green or pink and even giving off some iridescence. This could be from the fat on the meat part of the bacon. This isn't spoiled meat though.

According to the USDA, a benign reason for a green cast to meat is that pigment in the muscle has changed color from heat or processing.O

Oh, I saw that fold-down stand attached to the door in a public bathroom but I didn’t realize it was for changing. Makes sense but it wasn’t much bigger than a cubic square feet. If you’re a big person or have big feet, that wouldn’t work out so well…
