I never had a problem with a non heated, non insulated garage for the last 23 years. Now I have condensation and high humidity in my garage. House built in the 60s. Live in the north east so can not have a dehumidifier in here for the winter. I did put in an exhaust fan recently. Moisture seems to me coming up thru the concrete wall foundation blocks and attaching itself to the horizontal note mold patterns on the ceiling in the help!
