For those who never got their questions answered you leave it open for initial burn off

For initial burn... heat press open or closed? I set the temperature at 350, but I cannot set the timer for 3600 seconds b/c it’s only 3 digits. If I close it on zero seconds, it beeps obnoxiously the entire time.
