INGREDIENTS for the Berta Jay's
EASY ITTY-BITTY PANCAKES

DRY INGREDIENTS
1. Into a bowl, add:
1 cup flour (I used ½ cup whole wheat pastry flour + ½ cup spelt flour)
pinch of salt
2½ teaspoons dry sweetener (I used evaporated cane juice)
2½ teaspoons no-aluminum baking powder (I used Rumford)
2. Mix well. Make a well in the middle and then set the bowl aside.

LIQUID INGREDIENTS
1. Into another bowl, add:
1½ teaspoons egg replacement (I used Ener-G) + 2 tablespoons tepid water and mix well.
2. Pour Ener-G into 3/4 cup plant milk.
3. Add 1 tablespoon unsweetened applesauce.
4. Mix together well.
5. Pour this liquid mixture into the dry mixture.
6. Stir them together well; let this mixture stand for about 1-2 minutes to thicken slightly.
7. Use a tablespoon to pour mixture into a heated non-stick fry pan or griddle.
8. Cook until bubbles form; then, flip and cook for another 2-3 minutes.
9. Remove from pan. Add your favorite toppings and

My objective for this channel is to share with others what I have learned over the last 30+ years about living and eating healthier. I share my knowledge with my small circle of friends all the time. I am not a doctor, nor do I hold any type of medical degree, but I believe that my tried experiences may help someone else.

For over 30 years I have used every diet imaginable to lose weight, but I confess that I am now at home using the vegan lifestyle. I want to share what I have learned about eating and enjoying food. And, since I am still learning how to be more consistent with this lifestyle, I have decided to eat more healthily, realizing the weight will come off eventually. Though I have not reached my goal weight, I know that sharing with other people in front of a camera with help me to stay on course.

I have, with the help of my husband of 37 years, raised 3 grown children. I will also share some cooking shortcuts as well as some natural formulas I have used and still use for everyday problems.

Hi Ms Berta! We enjoy pancakes & enjoy experimenting with new (to us) ingredients as well. Serving date paste with the pancakes had everyone clamoring for more! Thank you so much sharing and demonstrating your recipe and the use of the different ingredients. Kudos to Evan, too!! ☺

I've not heard of this fad of making teeny tiny cereal pancakes and eating them with milk, but then again, I live under a rock. Yes, we have made the silver dollar sized pancakes, but boys want big pancakes. lol My oldest ate apple butter on his, my youngest nothing on his and the rest of us used syrup. Yours are looking mighty good Berta! Hugs, Brenda

My grandmother always made Silver Dollar Pancakes for us in the 1950s.

I remember silver dollar pancakes! It’s so different how they make tiny pancakes nowadays and call them cereal pancakes. I googled it to see how small they were, and sure enough, they are about the size of a quarter! I’d much rather make silver dollar pancakes. Thank you for your recipe Berta. 😊 your pancakes looked delicious!

Girl, I just got in from 3 hours on the lawn mower. It's 9pm....and those look delicious!! Made me hungry! I've got a challenge for you. I need gluten free recipes. Would you be able to come up with a gluten free version that uses a homemade mix?? Thanks for the video! And, yes please for the video on the date paste! ; )

We used to do dollar cakes ... Those are nickle cakes ... I'm thinking making like Oreos ... Put cream cheese in the middle ...
